Picture of the week: Brooki Bakehouse launches global cookie vending debut at Brisbane Airport

This week’s picture of the week showcases Brooki Bakehouse unveiling its first ever cookie vending machine, giving international travellers a taste of Brisbane at the airport.

Social media sensation Brooki Bakehouse has taken its first step onto the global stage with the launch of the world’s first Brooki Bakehouse cookie vending machine at Brisbane Airport (BNE) International Terminal.
The new installation gives departing international passengers round the clock access to the brand’s signature chunky cookies, designed for travellers seeking a quick taste of Brisbane before boarding. Each cookie is freshly baked, sealed for freshness and packaged to travel easily across borders.
The vending machine features a curated range of Brooki Bakehouse bestsellers including Biscoff, Milk Choc Chip, Nutella, Red Velvet, NYC chocolate chip walnut and Salted Caramel, alongside a rotating selection of limited edition flavours.
Founder Brooke Bellamy said the international terminal location offered an opportunity to introduce the brand to a global audience while celebrating Queensland produce.
Brooki Bakehouse has become a Brisbane icon, and we are thrilled to showcase it to the world, Bellamy said.
She added that the cookies are made using ingredients sourced from across Queensland and Australia, including local macadamias, Bundaberg sugar, flour from regional mills and Australian butter.
According to Bellamy, customers regularly purchase boxes of cookies from the flagship store to take home to family and friends, which inspired the move into a travel friendly vending format for international departures.

Brisbane Airport Executive General Manager Commercial Scott Norris said passengers consistently respond positively to local food brands that reflect a sense of place.
He said travellers enjoy discovering regional flavours, and the vending machine provides a convenient and memorable way to experience Brisbane through a well known local brand.
The Brooki Bakehouse vending machine is located in the International Terminal departures hall and is now operating for outbound passengers.
The launch follows the opening of Brooki Bakehouse’s first airport expansion store in Brisbane Airport’s Domestic Terminal in September 2024, where the brand has proven popular with travellers and flight crew.
The vending machine forms part of Brisbane Airport’s plan to enhance its international offer, with 13 new and refurbished outlets scheduled to open at the International Terminal by 2027.
